What You Will Learn
Premium kitchen appliances deliver remarkable engineering — but the technology homeowners fall in love with (or regret buying) is rarely the performance itself. It’s how they interact with it. Drawing on 15+ years of luxury appliance industry and fine-dining experience, Chef Andrew Forlines of ApplianceFinder.co unpacks a critical distinction for design professionals: the difference between what an appliance does and how it operates in daily use.
From induction ranges and convection steam ovens to smart refrigeration, this session separates raw performance — heat delivery, temperature stability, efficiency — from the customer interface: controls, displays, connectivity, and usability. Attendees will learn which specifications translate into real cooking benefits, which interface factors drive buyer’s remorse, and how to guide clients toward selections that integrate smoothly into the design process — delivering kitchens clients love to live with, not just admire on paper.
Learning Objectives:
- Identify current trends in luxury home kitchen appliance technology. Attendees will receive a general update on emerging technologies shaping the luxury kitchen market and how these trends influence both product development and consumer expectations.
- Distinguish between functional appliance technology and end-user operational technology. Attendees will learn to separate the engineering that drives performance (thermal delivery, precision, efficiency) from the operational layer the client actually experiences (controls, displays, smart interfaces, usability), and to recognize when a technically superior appliance may still be a poor fit for a client’s daily habits.
- Apply a structured process for guiding clients through appliance suite selection. Attendees will learn how to build client confidence through a needs-based selection framework, and how to integrate appliance selection early in the kitchen design workflow — minimizing revisions, installation errors, and costly mid-project changes.

Appliance Technology Specialist, Appliance Finder
I’m Chef Andrew Forlines, I provide education on built-in home kitchen appliances to kitchen designers and homeowners, among others. There is more variety and complexity available than ever before when it comes to built-in home kitchen appliances. Steam ovens, induction burners, sous vide cooking, WiFi connectivity, and automated cooking are just some of the many cooking technologies to select from. Much of this technology has migrated from the fine dining restaurant industry that I worked many years in.
My experience as a chef and passion for cooking technology combines in my role as your guide to understanding, selecting, and using modern home kitchen cooking appliances with confidence! I offer consultations and webinars on my website, chefaf.com.
